"Man" is the standard word, and it usually means a male adult.
"Guy" is informal, and it can mean a child (boy) or an adult.
"Guy" is also sometimes used for girls. For example, my niece used to always say, "Hi, guy!" to her girlfriend.
And when you walk up to a group of men and women (or boys and girls), you can say, "Hi, guys!")
But usually, a man/boy doesn't call a woman/girl "guy".

Guy can me more casual. Man can be a bit more descriptive. But they are fairly interchangeable.
That guy has a tall hat.
That guy is crazy.
That guy is cool.
Less common would be to say man.
