Apenas hay helados = There's almost no ice creams / There are barely any ice creams
Hay pocos helados = There are few ice creams

'Apenas' es un adverbio: apenas he comido (=I have hardly eaten)
'Poco' es un adverbio y un adjetivo:
he comido poco (=I have eaten just a little)
he comido poca comida (=I have eaten little food)
'Poco' niega el adjetivo que le sigue: poco cansado (not very tired)
'Un poco?= a little (un poco cansado=a little bit tired)
'poco' y 'muy poco' tienen significado parecido, refleja la actitud del que habla.
'Poco' tiene significado negativo:
Hay poca leche, hay que ir a comprar ya.
'Un poco' tiene significado positivo
Hay un poco de leche, no hay que ir a comprar todavía.
Quizá la cantidad de leche es la misma en los dos casos, depende de la opinión o actitud del que habla.
Quiero poco= I don't want much, I am not very hungry, I don't feel like it.
Quiero un poco= I don't want much, but I am interested in trying it.
