Indeed, “アメリカ人” is a standard term and friendly / casual way but to be honest occasionally would sound a bit offensive (e.g. using for insult) to some people. In my opinion, when using it in a formal setting, you should say “アメリカの人[ひと](polite way)” or “アメリカの方[かた](more polite way)”.
