What is the meaning of this statement & Why did not the speaker use "this superhero" instead of "that superhero"?
Yes it could refer to "that" someone we are speaking about who is not there right now but they are in our imagination.

"about that (something) like" is slang. It means everyone is committed to being a superhero. Everyone is very serious about the superhero way of life. They always use "that" instead of "this"; I don't know why.
