Hoy estaba el Ășltimo dĂa de clases it's not correct ("fue" or "ha sido" instead "estaba") and means Today was the last day of school/classes
Hoy estaba en el Ășltimo dĂa de clases means I was in the last day of school/classes

@caroline_2k1: the difference it's the usage of "en" and you can say "Hoy estaba en el Ășltimo dĂa de clases", this means Today I was on the last day of classes. Or you say " Hoy era el Ășltimo dĂa de clases", this means that today was the last day of classes.
I hope this helps.

Oh, with the help of @kliz commentary now I understand what u were truly asking:
Hoy estaba EN. Always use the EN (in) for saying where u were/have been. If you say hoy estaba el ultimo dia, it makes no sense (Although literally word-by-word translated is Today was the last day, that sentence would make no sense for a Spanish speaker. As I said before here u are using "estar" and the correct verb here is "ser". That can be so tricky for learners :(((
