"shopping center" isn't (in my opinion) something we say much. I hear (southern CA anyway) more commonly..... "THE MALL" (if it's a mall) or THE STRIP MALL (which is a smaller, outdoor shopping center with maybe a grocery store and a bunch of other stores). I just asked my 21-year son what he would say. We agree -- we say the specific store. "I'm meeting at the Vons", "We're meeting at the Jersey Mike's".
