Q:
One of Jim's hobbies is building model airplanes.
Why don't we use: ... OF model airplanes?
Why don't we use: ... OF model airplanes?
A:
It's because one is a verb (and takes a direct object) and the other is a noun. In the sentence "Jim's hobby is building model airplanes", the word "building" is a verb. If we changed that so that "building" became a noun, you would indeed need "of" as in "Jim's hobby is the building of model airplanes". I don't actually think it sounds very natural but it would at least be accurate English. But a transitive verb (one that takes a direct object) has no need for "of" after it.

Q:
Jim and the pirates started the treasure hunting walk. Jim was tied with a rope that Silven held in his hand, then he had two guns,a sword and the parrot Captain Flint on the shoulder. They found a skeleton after a tall tree pointing to Skeleton Island (Silver said that was a Flint joke). Then they heard that sea song and the pirates were scared it could be Flint ghost but Silver encouraged them to continue. They found a hole under the tallest tree. Pirates were angry and wanted to kill Jim and Silver, but the doctor shot them from behind them. Silver thanked him and they discovered "the ghost" was actually Ben. Then found out the treasure had been found by Ben who brought them to a cave with lots of gold piles. They had supper all together,Silver the old good man he was at the beginning. The next days they loaded the gold on the ship. They decided to leave without the three pirates who were ran away when the doctor had shot. They landed in Spanish America and got off the ship for the evening. When they came back they discovered Silver had run away with a bag of gold. They saw him no more. The Hispaniola came back to Bristol with only five men of the original crew. The treasure was divided among them. Jim never came back to Treasure Island, even if there was other treasure.
